The early days of Simon Bros. Bakery

Simon Bros. Bakery began as one of seven Jewish bakeries located on Lawrence Avenue in Albany Park. Bill, Ben and Saul Simon immigrated to Chicago from Poland in the 1920’s, when the bagel-making trade became popular. Soon after their arrival they learned the bagel-making trade while working in a bakery on Chicago’s West Side.

Late 1970's and Early 1980's

Preparing Simon Brother's Bakery

For Diversification And Rapid Growth; Now, it’s the late 1970’s. Mike mastered all of Bill’s bagel and bread recipes and, over time, became a partner and master baker and was eager to expand Simon Brothers Bakery business. First, Mike took over the Kosher butcher shop and garage for delivery trucks next door. Mike’s foresight to expand made it possible for Mike to dramatically expand their product line and Simon Brothers Bakery’s commercial business to customers.

Fortune Bagels. Kathy Bretz Enters the Business While he saw many opportunities for expansion, Mike Bretz wanted to find a more sustainable way to bring customers in. He created a marketing plan that included many different pranks that would most likely earn him a reality TV show in modern times.

For instance, he wanted to capture the Yiddish sayings and words of wisdom shared by the Simon Brothers.
